German Apple Pancake

    This is a Muhn family favorite. My mom found it in a Bon Appetit magazine in the early 80’s.




    • 4 extra large eggs
    • 1/2 cup flour
    • 1 tablespoon sugar
    • 1/2 teaspoon baking powder
    • 1/8 teaspoon salt
    • 1 cup milk
    • 1/4 stick butter (melted)
    • 1 teaspoon vanilla
    • 1 pinch nutmeg

    Fruit Mixture:

    • 1/2 stick butter
    • 2/3 cup sugars
    • 1/2 teaspoon cinnamon
    • 1/8 teaspoon nutmeg
    • 2 cups tart apples (peeled & sliced thin)


    1. Combine eggs, flour, sugar, baking powder, salt, and milk in blender; process until smooth. Blend in melted butter, vanilla, and nutmeg. Let batter stand at room temperature for 30 minutes or refrigerate overnight.
    2. Position the rack in center of oven; preheat oven to 425 degrees. Melt butter in a 10" oven-proof skillet, brushing butter up the sides of the skillet. Remove from heat.
    3. In a small bowl, combine sugar, cinnamon, and nutmeg. Sprinkle 1/3 cup of the sugar mixture over the butter. Layer apple slices evenly over the butter. Sprinkle the remaining sugar mixture over the apples. Place the skillet over medium high heat only until mixture bubbles. Gently pour batter over apples. Transfer skillet to oven and bake pancake for 15 minutes. Reduce heat to 375 degrees and bake an additional 10 minutes. Remove from oven. Cut into wedges and serve immediately.
